Steps to make Tortellini:
  1. Cut onion and kielbasa. Cut kielbasa in halves. Cut mushrooms into smaller pieces.
  2. Saute onion, kielbasa and mushroom in olive oil.
  3. Boil water while onion/kielbasa/mushroom mixture is cooking. Cook both packages of tortellini noodles. I like to get the bertolli noodles in the dairy section. They are bigger and taste fresher.
  4. Drain noodles. Add onion/kielbasa/mushroom mixture and add 1 while jar and half of the other jar of Alfredo sauce. I like to use the bertolli three cheese sauce. Use leftover sauce for leftovers.

A delicious ring shaped pasta usually filled with parmesan cheese. For me, tortellini is as much a classic as cappelletti. In Italy, tortellini bolognesi' filling is always traditional.
