  1. Get 24-26 uncooked jumbo pasta shells
  2. Prepare 1/2 c. white onion, diced
  3. Make ready 1 1/2 pounds ground beef or turkey (we use turkey most of the time)
  4. Prepare 2 tsp chili powder or homemade taco seasoning
  5. Prepare 4 oz neufchâtel cheese
  6. Make ready 16 oz taco sauce, divided (you decide your level of heat)
  7. Prepare 1 c. shredded cheese of your choice, I've used cheddar, Mexican blend, and Queso Chihuahua
  8. Get sour cream, lettuce, sliced black olives for garnish
Instructions to make Mexican Stuffed Shells:
  1. Preheat oven to 350. Cook pasta according to package directions (usually 14-15 minutes, but don't overcook). Drain and rinse in cold water, drain again.
  2. Meanwhile, in a large skillet, brown onion with the turkey until - the meat is cooked through. Stir in chili powder, cream cheese, and 1/2 c. taco sauce until blended. Stir in 1/2 c. shredded cheese.
  3. Spoon about 2 Tbsp of the filling into each shell. Place shells in an 11 x 7" baking dish coated with cooking spray. Top with remaining taco sauce and cover.
  4. Bake until heated through, 20-25 minutes. Sprinkle with remaining cheese, and bake uncovered until cheese is melted, 5-10 minutes. Serve with garnish as suggested above.
