  1. Prepare 2 oz Pasta
  2. Make ready to taste Pancetta (or bacon)
  3. Get 1 egg + 1 yolk
  4. Make ready 1/2 cup grated parmesan

  6. Make ready to taste Pepper
  7. Make ready 1 garlic (optional)
Instructions to make Pasta Carbonara:
  1. Bring heavily salted water to boil and throw in pasta
  2. Add sliced pancetta/bacon to cold pan on medium heat until enough fat is rendered
  3. Add optional crushed garlic. If your pancetta/bacon isn’t cured, season with pepper
  4. Mix eggs with parmesan cheese in a separate cup. Season mix with salt + pepper
  5. When pasta is ready (al dente), turn off all heat and add pasta to pancetta/bacon pan, along with some pasta water. Mix to emulsify.
  6. When pasta has stopped sizzling, add egg + cheese mix and stir until uniform.
  7. Add salt/pepper/cheese to taste
