  2. Get 500 gram tomatoes

  18. Prepare 1 medium onion finely chopped
  19. Get 1/2 tsp garlic paste
  20. Make ready 1/4 tsp salt
  21. Take 1/4 tsp black pepper powder
  22. Prepare 1/4 tsp mixed herbs
  23. Prepare Pasta -
  24. Take 3/4 cup all purpose flour
  25. Take 3/4 cup fine semolina
  26. Get 1 tbsp oil
  27. Take 1/2 tsp salt
  28. Prepare 1/3 cup hot water
Steps to make Spinach and Feta Ravioli:
  1. First of all wash tomatoes and put a cross on top of each tomato. Putting a cross makes it easier to peel them later on. Now add tomatoes to the boiling water and cook for 10 minutes. Let it cool down and peel them. Blend them to make a puree.
  2. Heat oil in a pan and add finely chopped onion and garlic paste. Cook it for a minute on medium heat. Now add tomato puree to it and mix it well. Now add chilli powder, sugar, black pepper powder, mixed herbs and salt to it and mix it. Cook it until it becomes slightly thick. Now add tomato sauce and basil leaves to it and cook for a minute.
  3. Add fresh cream and cook for a minute and turn off the heat. Keep it aside to use it later. It can be even prepared in advance and kept it in the fridge for 2 to 3 days.
  4. Clean and wash spinach leaves thoroughly to remove all the dirt. Now add half cup of water in a pot and add washed spinach leaves to it. Cook it for 10 minutes or until spinach is cooked properly. Stir in between. Now add spinach to cold water and refresh it. Take it out from the water and chop it finely.
  5. Heat oil in a pan and add onion and garlic paste and cook it for 2 minutes. Now add salt, pepper, mixed herbs and chopped spinach to it and give it a good mix. Cook it for 2 minutes and add crumbled feta cheese to it and mix it.
  6. Cook for a minute and turn off the heat. Be careful while adding salt as feta cheese itself is very salty. This filling can be prepared in advance and kept in the refrigerator.
  7. To prepare pasta, add flour, semolina, salt and oil in a bowl. Now start adding hot water little at a time and keep mixing with the spoon. When it becomes bearable, start kneading the dough. Knead it for 4 to 5 minutes. Cover and keep it for 30 minutes.
  8. Now take some dough and roll it out into a very thin big circle. With the help of a stainless steel glass or a cookie cutter, cut circles. Now take one circle and apply some water on the edges. Put some filling in the centre. Now take another circle, apply water on the edges and cover the filling with it. Press edges lightly to seal. Make sure to take out all the air and then seal it. Press it lightly with the help of a fork to seal it properly. Collect and roll the remaining edges too. Repeat.
  9. Take a baking tray or a big plate and cover it with baking paper. Keep arranging raviolis on it as you make it. Keep it covered all the time. When all are done, boil water in a pot with a pinch of salt and a teaspoon of oil. When it comes to rolling boil, add a few raviolis at a time and let it cook. Flip it once while it is cooking. When it is cooked it comes on top, this will take around 2 to 3 minutes.
  10. When the raviolis are cooked, take them out on a wire rack. Then arrange them on a tray covered with the baking paper so that they do not stick to each other.
  11. To serve, add some hot sauce in the plate and arrange raviolis on top. You can top it up with some grated parmesan cheese or any cheese of your liking. Garnish it with basil leaves. Serve it with some bread on the side.
