  1. Cook pasta. Wisk vinegar, 1/2 tsp salt, and 1 tbsp oil in small bowl. Place veggies on baking sheet and brush with the vinagrete. Heat broiler to high. Broil until tender, about 8 minutes per side.
  2. Heat oven to 350°F. Chop the roasted veggies. Place a large pot over low heat. Add garlic and remaining oil and cook for 3 minutes. Add pasta, veggies, sauce, seasonings, and feta and toss to coat.
  3. Transfer to 9x13 dish. Sprinkle with mozzarella. Cover and bake for 30 minutes. Uncover and bake for 20 more minutes.
  4. (OR) Cover and freeze for up to 3 months. Thaw overnight.
